Description

Radish microgreens are high in Vitamin K (phylloquinone) is required for blood coagulation and is most abundant in dark green leafy vegetables such as spinach and broccoli.  They are also an abundant source of Vitamin C (Ascorbic Acid) with over three times the amount in mature spinach leaves. Vitamin C is an essential nutrient for the human body and acts as an antioxidant. The carotenoids (beta carotene/ Vitamin A, lutein, zeaxanthin, violaxanthin) are fat soluble antioxidants that can protect cellular structures from damage. The beta carotene content of radish microgreens is comparable to that of carrots and sweet potatoes. The carotenoids lutein and zeaxanthin have been shown to play a critical role in preventing age-related macular degeneration and cataract. Radish microgreens have levels similar to mature spinach leaves, widely considered to be an excellent source of lutein and zeaxanthin and have extremely high contents of the fat soluble antioxidant Vitamin E (alpha and gamma tocopherols).  This is more than double the amount of Vitamin E in sunflower seeds!
